Caramel Custard in Idli Maker and Pressure Cooker.

So here I am Bangalore, after a 8 month long separation from you.

On this Father's day, Mr G picked me and baby I from my home in Kerala and took to our home in B'lore, for the first time after my delivery. It also marked our baby's first visit to our home. I decided to celebrate this moment with a simple dessert and what came to my mind first ? Caramel Custard :) Here is the recipe. I decided to make this in an Idli Maker!!!




Ingredients

Caramel Sauce

  1. Sugar - 4 Tbsp
  2. Water - 2 Tbsp


Custard

  1. Milk - 350 ml
  2. Sugar - 6 Tbsp
  3. Egg - 2
  4. Vanilla Essence - 1 Tsp
How to Make ?

Caramel Sauce
  1. Let's prepare the sauce first, so that we can give it enough time for setting.
  2. Heat sugar and water in a pan.Do not stir but swirl the pan. 
  3. The sugar boils and changes color to dark brown.Then it bubbles and you keep swirling. Once it  begins to thicken, pour it into the trays of Idli Maker, just like you do for making Idlis. But, pour only a small portion as you need to cover the rest of the portion with Custard mix which you are going to make next. 
Custard
  1. Heat milk in a pan and when it boils, reduce the heat and keep it simmering. Remember to stir it once in a while. Wait till the milk reduces to half its amount and then allow it to cool.
  2. Beat 2 eggs along with sugar. Beat it till all of the sugar has mixed well.
  3. Then add Vanilla essence and beat again.
  4. Now add the milk and continue beating, till the mixture is uniform in color and consistency.
Cooking in Idli Maker
  1. Pour the custard mix into the trays of Idli Maker. Ensure that the sauce has set well. 
  2. Pour water in the Idli Maker, I kept the level just a bit lower than the first tray and kept that tray empty. 
  3. Keep the Idli Maker in high flame for 20 minutes. Then simmer it for another 5 minutes. 
  4. After that I opened and checked if the custard has cooked well , byinserting a knife. It came out clean :)
  5. Then I continued to keep the Idli Maker in low flame while keeping it open for 2-3 minutes.
Cooking in Pressure Cooker

1. Select a container where caramel and custard can be kept for setting. This should fit well inside a pressure cooker.
2. Caramelize sugar in this container itself and pour custard mix .
3. Cook for 3 whistles and switch off the stove . Let it cool inside the cooker itself and when all the pressure is gone, take out the container.
4. Refrigerate for 2 hours :)


Voila! Caramel custard is ready . Now , let it cool down to room temperature and then take out the custards from tray and refrigerate for 1 hour before serving.
