Chakka Vattal - Jack fruit Chips


It was one of the Onam vacations and we were at my paternal ancestral home. It was late night, however the house was bustling with lot of activities. Kitchen was active as the ladies in the house were preparing for the feast next day (Thiru Onam). Kids in the house including me were playing and running around from one corner to other. Gentlemen were discussing politics :) That's when we got a delicious smell from kitchen. The head chef was my grand mother and she was preparing jack fruit chips! The smell was that of raw jackfruit when it was being dropped in hot coconut oil. The kitchen when compared to the modern ones of today was darker and it had small window. We peeped in through it as well as the busy gentlemen :) It was grandmom's speciality (among many others) and hot jack fruit chips were being transferred to news paper sheets for drying and cooling. Later on they were being stored in tight containers. However we all digged in and those magical visuals of dim light in the kitchen, us peeping through window, presence of all family members, Grandmom's proud face and the taste lingers on.

Here is the recipe.

Ingredients

  1. Ripe Jack fruit flesh.
  2. Cooking Oil 
  3. Salt
How to Make?
  1. Cut the ripe jack fruit flesh along the length.
  2. Heat Oil in a kadai.
  3. Add salt to the oil.
  4. Drop the jack fruit pieces one by one.
  5. Take out, once it attains golden yellow color.
