Kozhi Porichathu - Chicken Fry

Chicken Fry , isn't it a very simple dish ? The Kerala style of frying the chicken is not just dropping marinated pieces into oil.It is an art !!! Art of locking juicy chicken with Kerala spices :)

Let me share that with you.. thus sharing the Christmas cheer!

Kozhi Porichathu - Chicken Fry

Ingredients

  1. Chicken Pieces - Medium Sized - 6 pieces
  2. Fennel Seed Powder - ½ tea spoon
  3. Cloves - ½ tea spoon
  4. Black Pepper Powder - 1 tea spoon
  5. Cinnamon Powder - ½ tea spoon
  6. Turmeric Powder - 1 tea spoon
  7. Red Chilly Powder- 2 tea spoon
  8. Coriander Powder- 2 tea spoon
  9. Lemon Juice - 1 table spoon
  10. Salt- 2 tea spoon
  11. Curry Leaves
  12. Oil for frying

How to Make ?

  1. Mix ingredients from #2 till #10. This is the masala.
  2. Make gashes on Chicken pieces
  3. Mix Chicken pieces with the Masala and keep it aside for 1 hour.
  4. Take a Kadai and cook the chicken pieces. Keep medium flame and lid closed. If you find water content to be less, then  add more lemon juice . You can also add a bit of water.
  5. Wait till chicken pieces get completely cooked.
  6. Now, fry these chicken pieces. you can take the chicken pieces out as soon as the color turns slightly brownish. This ensures that, chicken pieces are crispy from outside and juicy inside.
